RESUMO

The present work had as a purpose to evaluate physiological, nutritional and biochemical parameters in male Wistar rats which were a consequent of chronic ingestion of hiperlipidic diets containing orange pulp, a by-product obtained during the industrial production of the orange-juice. The animals were feed ad libitum during 28 days. With diets containing 1% cellulose, 2,5 and 25% orange pulp, which were called Control, NF 2.5 and NF 25 groups. Ihere were no significant variations in the food and water intake urinary excretion, body weight gain or relative weight of the liver and stomach (full and empty), however, the higher fiber intake of the NF 25 group increased significantly the excretion of fecal nitrogen. Consequently this decreased the apparent nitrogen digestibility (Da), in relation to the other groups, as well as the protein efficiency ratio (PER op.) in relation to the NF 2.5 group. Nevertheless, there was no significant variatiation in the nitrogen balance (NB), apparent biological value (VBa. op.) or net protein utilization (NPU op.) in the NF 25 group in comparison to the Control and NF 2.5 groups. This observation means that the orange pulp did not affected the dietary protein utilization. Orange pulp intake by the NF 25 group induced a significant increase in the fecal fat excretion, which contributed to lowering apparent lipid digestibility and reduced the plasmatic value of triacylglycerols, total lipids and also showed a tendency to reduce the serum cholesterol values. But, no diferences in hepatic concentrations of triacylglycerols, total lipids or cholesterol were observed among the Control NF 2,5 and NF 25 groups. In conclusion, the results of this study suggested that orange pulp ingestion may be used to reduce the human health risk associated with high blood lipids levels due to high dietary fat intake
