Influence of Cooling on the Glycolysis Rate and Development of PSE (Pale, Soft, Exudative) Meat

The aim of this work was to evaluate pH values fall rate in chicken breast meat under commercial refrigeration processing conditions and the development of PSE (pale, soft, exudative) meat.
