RESUMO

Brazil produces about 130 liters per capita per year, below the rate recommended by the United Nations of 215 liters per capita per year. In the United States, the main reason for the rejection of milk by the consumer is associated with the presence of off flavors. Therefore, the Department of Agriculture of this country was responsible for developing a language of the descriptors of off flavors. These off flavors are associated with their causes: absorption, bacterial or chemical contamination. Therefore, the quality control of milk, microbiological and physical-chemical should be employed, together with the sensory tests. There are tools and marketing techniques that capture the consumer s views and interpret this information in order to apply them in the management of quality, Quality Function Deployment (QFD) is notable because it allows the integration of the areas of marketing and food science . This study aimed to compose the matrix of QFD for fluid milk. Therefore, sensory evaluation of off flavors was rescued. In order to use the data of this analysis in the QFD matrix, changes were made through the introduction of linear scales. The integration of the off flavor analysis in Quality Matrix was designed to facilitate the interpretation of sensory input through out the quality characteristics of raw materials and processes. The first matrix gives the requirements of consumers towards the fluid milk product versus the quality of pasteurized milk, which was deployed by the quality of the raw material and process control items. Consumers rated the taste as the most important attribute to be evaluated, and also the absence of foreign, acid / sour / cheese and rancid / oxidized tastes. These requirements deployed resulted in the quality of milk on the microbiological, acidity, sensory evaluation as to the attributes of flavor of pasteurized milk, cheese flavor, rancid flavor and aftertaste of cheese, and the absence of malty, sour, unclean, fruity, foreign, rancid, light oxidized and metal oxidized off flavors are classified with the highest absolute weight and more important than the others. As for the quality of the raw material, stands at number one in order of importance the microbiological analysis and reductase, followed by analysis of acidity and alizarol stability. Characteristics of the process are, stands in order of importance, the efficiency of the heat treatment of pasteurization, the waiting time after milking to be refrigerated, the temperature of cooling of raw milk and the efficiency of cleaning the milking room. The sensory analysis of off flavor promoted innovation in the interpretation of the QFD data because associates attributes of off flavor with the causes of it, thus facilitating the deployment as to the quality of raw materials and control of process items. Thus, the characteristics of quality that should be worked in order to improve the quality of the product became more evident
