RESUMO
Germination is one of the most ancient, simple and economical processes to improve the nutritional value of grains, screening out of three Fabaceae (Fabaceae) species, the adequate germination period for human consumption, basing upon physiological, chemical and biochemical characteristics, being therefore, the main objective of this work. Seeds and sprouts of three species of Fabaceae (Vigna radiata (L) R WilczeK, Vigna mungo (L) Hepper and Cajanus cajan (L) Millsp were investigated. Sprouts of five germination times were obtained. The seed: sprout yield of each species studied was verified. Seeds and sprouts were investigated as regards their centesimal composition, vitamin C and content of some minerals (K, P, Na, Fe and Ca). A few antinutritional substances, activity of the trypsin inhibitors, phenolic compounds and nitrate were studied. The experiential design was in randomized blocks, in 6x3 factorial, with three replicates, regression analyses having been accomplished. The black mung bean stood out concerning seed: sprout yield, presented values higher than the other bean species studied as to their contents of sodium and iron, both for the seed and for the sprouts and showed sprouts with lower contents of tannins, nitrate and poor activities of trypsin inhibitor. The green mung distinguished as to the contents of proteins, both in the seed and in the sprout as for the contents of fiber and vitamin C (4. 9 times as high as that in the seed), its having presented lower content of nitrate and poor activity of trypsin inhibitor in the sprout. The dwarf pigeon pea, although, had presented lower seed: sprout yield, presented the highest content of vitamin C on the sixth day of germination (3. 6 times as high as the one in the seed), elevated contents of potassium and sodium and sprouts with low contents of tannins and nitrates. The three bean species showed relative to the variables studied, different responses as to the seed: sprout yield, contents of nutrients and antinutrients. It was found that six days was the period most indicated to the germination of the three Fabaceae species. _________________
