RESUMO

The annual production of citric acid is about 800,000 tons. The commercial demand is rising due to its advantages such as easy assimilation, palatability and low toxicity, when compaired to others acids. The citric acid is an organic acid produced industrially by some microrganisms, mainly by the fungus Aspergillus niger, and it finds great application in food, chemical and pharmaceutical industries. The process of citric acid production by yeasts shows many advantages when compaired with the production by fungi, including higher conversion rate and productivity, tolerance at high substrate concentrations, it allows enhranced process control and the development of continuous process with cell recycle. However, it has one major disadvantage which is the simultaneous production of isocitric acid, depending on the culture conditions....Note: The complete abstract is available with the full electronic digital thesis or dissertations.
