RESUMO

The understanding of the technological characteristics of the wheat genotypes usually grown or included in breeding programmes and the understanding of the effect of the genotype and environment interactions are important to the diverse segments of the industrialization of this cereal. The quality of baking and pasta products is directly related with the grain quality used in the production of the flour that willbe used to elaborate them.
