RESUMO

The objective was to characterize the slaughtered cattle in Lavras - MG, evaluate the zootechnic characteristics and to determine bovine brucellosis index. Another objective was to characterize some beef cattle farms, to determine local animal production indexes and compare these with the national indexes. A production index survey was carried out in 8 beef cattle raising farms. All animals in this study (n=720) were identified and slaughtered from September 20th through November 20th in 2004. Variables such as: origin, breed, genetic group, general condition, live weight, body condition, age, sex and brucellosis incidence were assessed during this period. After arriving at the slaughter house, animals were weighed, classified according to their breed, genetic group, and origin. Before slaughter, their body condition (BC) was determined on a 1-9 scale, and general condition, graded in 3 levels: good, medium and poor. Blood samples were collected at bleeding for brucellosis diagnosis. Sexual condition (Castrated male, CM; Non-castrated male, NCM; Pregnant female, PF; and Non-pregnant female, NPF) was observed during scratch and evisceration. Age was determined by visual appraisal through counting the permanent incisive teeth (p.i.t.). Data were collected according to a standard questionnaire, which aimed characterize the farm in relation to its size, soil usage, yield factors, main production systems, pastures and forage stands, food production in general, farm equipment, installations and machinery, general product usage (fertilizers, seeds, etc.), technical assistance, labor, herd management and health, income, among other information. Most of the animals slaughtered during the surveyâs period were male. Approximately 85.0% (n=613), of the animals were from local farms, with predominance of the Girolando genetic group. Overall average slaughter weight was 438.5(115.97) Kg (n=720). The female (PF and NPF) were older (>48 months old) as compared to male animals. NPF had lower body condition scores (3, 4 and 5). Male (CM, NCM), presented good body conditions and were younger (<48 months old). Brucellosis frequency was 4.7 %, similar to national averages. Production indexes on the beef farms surveyed were slightly superior to the national average. It can be concluded that the beef cattle production in the farms surveyed is developing and adopting new technologies.
