RESUMO

The present is a study of the amino acid profiles of pnr teins aiming at the quality assurance of binary protein mixtures of either animal or vegetable origin found in milk and meat products for human consumption. A number of commercial milk (pre-mixesfor bottle formulas, milk-shakes and milk substitutes) and meat (sausages, mo rtadelas, etc.) products were sampled for analysis. Standard aITVes were prepared in which groups were defined as the various mixtures of milk-soy and meat-soy proteins and sub-groups were sets of four amino acids (variables) that best characterized each protein source. The data (4 replicates) were statistically analyzed essentially as follows: a. Regression Equation (Manual procedure) . As a function of protein composition, each relevant amino acid generated a regression equation, which served to calculate the percent of milk or meat protein in the mixture. Since a number of percent values is obtained equal the number of existing subgroups, the median value was used for every product. b. Multivariate Analysis of Variance and Discriminant Analysis wfth the aid of a computer. For this purpose, the MANOVA program in Fortran-10 language and the DISCRIMINANT program in SPSS (Statistical Package for 80- cial Sciences) language were used. The Discriminant analysis furnishedprotein percentages in terms of scores for each one of the several sub-groups, from where the medians were obtained. The precision of the two procedures, assessed by comparing the experimentally obtained with the expected values, was reemed satisfactorywithin the pre-defined intervals. Especially due to the assignment of statistical weights to variables by the computer, the Discriminant Analysis seemed like the method of choice. However, for the purpose of routine quality assessment in Brasil, the Regression Equation procedure appears to sufice, considering its simplicity
